Pascal, who arrived in the region in 1987, an agricultural consultant, and Marielle, architect by profession, had only one concern : to succeed at an activity that corresponded to their dearest aspiration. Today, their wines are appreciated and sought after in the four corners of the world.

Grape varieties :

60% Grenache, 20% Syrah,
15% Mourvèdre, 5% Cinsault.

Type de soil :

Clayed limestone slopes with alluvial terraces, rich in round stones.

Yield :

35 hl / ha.

Pruning :

Cordon of Royat and goblet pruning .

Age of vines :

30 years old.

Harvest :

100% hand-picked.

Vinification :

Traditional method with destalking, each grape variety is vinified separatly. Fermentation in vats for 12 days.

Maturing :

During 10 months, 70% in vats, 30% in 3 or 4 year-old oak barrels

Ageing :

5 to 8 years.

Appearance :

Intense ruby-red colour.

Aroma :

Elegant smell of blackcurrant and elderberry.

Taste :

Starting with full and concentrated flavours, silky tannins, blackcurrant and cherry, with a final touch of pepper and spice.

Serve with :

All type of meat (when young), game animals and cheese (when at the best of its age).

Beaujolais

Beaujolais is the last district of Burgundy. It produces one of the most famous red wine in the world. Beaujolais takes its generally light and fruity flavor from the Gamay grape variety. It should be tasted slightly fresh and young. There are four categories of wines in Beaujolais: Cru Beaujolais, in Brouilly, Côte de Brouilly, Morgon, Chénas, Chiroubles, Fleurie, Juliénas, Moulin à Vent, Régnié and Saint Amour, where the granitic soil gives one of the best Gamay. Beaujolais in the northern part of the district where the soil is limestone. Beaujolais Supérieur in the same part of the district but with one degree more of alcohol.
